It may sometimes be tempting to think of January as ‘that month after Christmas’; but that doesn’t mean that January can’t contain some magical things nonetheless.

In January

This month we celebrate Chinese New Year; the birthdays of Elvis Presley (8th), Oprah Winfrey (29th), and Justin Timberlake (31st); and the peak bargains of the January Sales!

January is Cervical Health Awareness month, International Brain Teaser Month, Nollaig na mBan (otherwise known as ‘Women’s Christmas’ on the 6th), Burns’ Night (25th); and Chocolate Cake Day (27th)

Plus it's a great time of year to see the Northern Lights in the north of the country, particularly around Donegal.

January Cooking

If you’re looking for what to cook, seasonal foods include beetroot, citrus fruits, rhubarb, haddock, and mackerel. Why not try Roast Beetroot & Squash Quinoa Risotto; a warming Fish Pie With Crushed Potato Topping, or zesty Orange & Soy Chicken?
