Kid-Friendly Sugar Biscuits

SWEET TREATS RECIPE: Kids will love to help bake and decorate these – and, let’s face it, eating them is no chore! This is a great recipe to have in your repertoire, as it is quick, delicious, easy and readily adaptable.

Makes 20-24 cookies

  • 225g butter
  • 200g caster sugar, plus extra for sprinkling over the dough
  • 1 tbsp brown sugar
  • 1 large egg, lightly beaten
  • 1 tsp vanilla extract
  • 280g flour
  • 1/2 tsp baking powder
  • Pinch of salt
  • Sprinkles or icing, to decorate

  1. Cream together the butter, caster and brown sugars for several minutes, until light and fluffy. Use a spatula to scrape down the bowl sides as needed, to ensure everything is well mixed.
  2. Add the egg and vanilla extract, and mix well. Now sift in the flour, baking powder and salt and mix until just combined, scraping down the sides as needed.
  3. Bring the dough together in a disc, cover with cling film and put in the fridge for at least one hour.
  4. Remove the dough from the fridge and leave at room temp for 15 minutes before handling. Preheat the oven to 190C/gas mark 5. Grease or line two baking sheets, and set aside.
  5. Flour your counter and a little over the dough, then roll out thinly to about 1/4-inch thickness. Sprinkle over some caster sugar, then cut out your cookies and transfer to the baking sheets. Chill the cookies for about 15 minutes before baking – this will help them to keep their shape, rather than spreading in the oven.
  6. Bake for 8-10 minutes until the edges of these cookies are just browning – these are meant to be pale cookies, ready for decoration. If you think they are browning too quickly, you could try turning the baking sheets halfway through cooking to ensure an even bake.
  7. Leave to cool on the baking sheet for several minutes, then transfer to a wire rack to cool completely. Once cooled, decorate to your heart’s desire!
