Fresh fruit sponge cake


A great dessert or tea-time treat recipe that can be adapted to suit whatever fruit you have to hand.

Served in slices or squares, this delicious cake has a fresh taste that is hard to beat!

Serves 4-6


  • 1kg fresh fruit of your choice (apples, cherries, pears, apricots, etc), peeled and chopped
  • Juice of 1 lemon
  • 3 eggs
  • 200g sugar
  • 1 pinch of cinnamon
  • 200g flour, sifted
  • 1 tsp baking powder
  • 1 tbsp full fat plain yoghurt


  1. Preheat the oven to 180C/gas mark 4. Grease a 12 x 9″ traybake tin and set aside.
  2. Put the chopped fruit into a mixing bowl. Add in the lemon juice, gently stir and then put into the fridge to chill.
  3. In another bowl, whisk the eggs together with the sugar and cinnamon.
  4. When combined, add the flour, baking powder and yoghurt, a little at a time. Mix together well, then add in the chilled fruit. Try to avoid breaking up the fruit.
  5. Pour the mixture into the prepared tin and back for approximately 30 minutes until golden and springy to the touch. Once cooked through, slice and serve either hot or cold.
