Spring onion pancakes

Ingredients

  • 400g bread flour
  • 280ml boiling water
  • Bunch of spring onions, finely chopped
  • 1-2 tbsp vegetable oil
  • Salt and freshly ground black pepper

Method

  1. Mix the flour and boiling water in a bowl using a fork. Once it starts to make a ball of dough, take it out of the bowl and place it onto a lightly floured surface and knead the dough into a nice round ball.
  2. Put the dough back into the bowl, cover it with cling film and allow it to rest in a warm area for a minimum of 30 minutes, but up to one hour.
  3. When the dough is ready, divide it into 16 pieces and roll each piece into a small, flat circle about a ¼-inch thick, using a rolling pin.
  4. Using a pastry brush, brush the circles with oil and sprinkle salt and pepper over each one.
  5. Divide the spring onions between the pancakes, placing them in the centre of each of circle.
  6. Roll up like a cigar and pinch together the ends, so the cigar makes a circle. Roll the circle flat again, to about a ¼-inch.
  7. Heat 2 tsp of the oil in a large pan on a medium heat. Fry the pancakes in batches until they are a nice golden brown colour – about 2 minutes on each side.
  8. Serve as a side dish, or just on their own as a snack.
