Lamb Hotpot

FAMILY FAVE RECIPE: This recipe is easy, hearty, and tasty! Perfect for a cool evening, this dish will warm your whole home.
Serves 6

Ingredients

  • 100g butter
  • 1kg stewing lamb, cut into chunks
  • 2 onions, roughly chopped
  • 4 carrots, peeled and sliced
  • 25g plain flour
  • 500ml lamb stock (or chicken)
  • 2 tsp Worcestershire sauce
  • 2 bay leaves
  • 1kg potatoes, peeled and thinly sliced
  • Salt and freshly ground black pepper

Method

  1. Preheat the oven to 160°C.
  2. Using a large flame-proof lidded casserole dish, heat half the butter until melted, then brown the lamb in batches, before setting aside.
  3. Add a little more butter to the dish and sauté the onions and carrots gently for about 5 minutes.
  4. Sprinkle over the flour and stir continuously for 1 minute.
  5. Pour in the stock and Worcestershire sauce and bring to the boil, stir occasionally, then turn off the heat.
  6. Add the lamb back into the dish, followed by the bay leaves, and season.
  7. Arrange the potato slices in neat rows overlapping over the top of the meat, and season.
  8. Cover the dish with the lid and place in the oven for approximately 1½ hours until the potatoes are cooked and tender.
  9. Remove the lid, brush lightly with a little more melted butter if you prefer, and put back into the oven to brown or under the grill for about 10 minutes.
