My Family , Recipes , Fish Teriyaki Salmon With Stir Fried Veg Quick, easy and healthy; this simple salmon recipe ticks all the boxes for a no fuss family meal everyone will love. Courtesy of ilovecooking.ie Serves: 4 Prep Time: 20 Minutes Cook Time: 20 Minutes INGREDIENTS 4 tbsp teriyaki sauce 2 tsp sweet chilli sauce Zest and juice of 1 lime 4 salmon fillets 1 tbsp vegetable oil 300g pack stir fry vegetables 2 tbsp soy sauce INSTRUCTIONS Mix the teriyaki sauce, sweet chilli sauce, lime zest and the juice in a bowl. Add the salmon fillets, coat and leave to marinate for 15 minutes. Heat the vegetable oil in a large frying pan and add the salmon, reserving the marinade. Fry the salmon for 4 minutes per side, until slightly charred. Set aside. Pour in the marinade and bubble for a few minutes, allowing it to reduce slightly. In another pan, stir fry the vegetables with a splash of water and the soy sauce for 3 - 4 minutes. Divide the vegetables among four plates, top with the salmon and a drizzle of the reduced marinade.
