The real Irish stew

FAMILY FAVE RECIPE:
Serves 4 Total Time: 2 hours 20 minutes

Ingredients

  • 800g stewing lamb, cubed
  • 500g potatoes, peeled and cut into chunks
  • 2 onions, chopped
  • 2 leeks, thickly sliced
  • 150g carrots, chopped
  • 100g pearl barley
  • 750ml lamb stock
  • ¼ cabbage, sliced
  • 2 tbsp vegetable oil
  • Salt
  • Pepper, freshly ground

Method

  1. Pre-heat the oven to 160°C
  2. Heat 1 tbsp of vegetable oil in a large saucepan over a medium heat and brown the lamb.
  3. Place the browned lamb in a large casserole dish and on top of the meat pile the potatoes, onions, leeks, carrots and pearl barley, season with salt and pepper.
  4. Add the stock and then cover with the lid or foil and place in oven for one hour.
  5. Remove the dish from the oven and add the cabbage and leeks, then return the pan to the oven for another hour together with more stock and seasoning, if required.
  6. As soon as the meat is tender it’s ready to be served – enjoy!
  7. Using the cheaper cuts of scrag end or middle neck (neck fillets) of the lamb makes this dish a really flavoursome meal
