Spanish Chicken And Chorizo Casserole

FAMILY FAVE RECIPE: Serves 4

Ingredients

  • 2 tbsp olive oil
  • 8 chicken pieces (thighs and drumsticks)
  • 1 large onion, chopped
  • 2 garlic cloves, crushed
  • 110g chorizo, diced
  • 100ml white wine
  • 2 tins chopped plum tomatoes
  • 1 tsp sugar
  • 1 tbsp fresh thyme
  • 2 bay leaves
  • 100ml chicken stock
  • 700g potatoes, peeled and roughly chopped
  • Handful of stoneless black olives
  • Salt and freshly ground black pepper

Method

  1. Heat the olive oil in a large saucepan over a medium heat, add the chicken pieces in batches and brown both sides, remove to a plate and set aside.
  2. Add the onion and garlic to the pan and sauté for 3-4 minutes until softened.
  3. Add the chorizo and cook for another 3-4 minutes, then add the wine and increase the heat slightly, leaving to cook until the liquid has reduced by half.
  4. Add the tomatoes, sugar, thyme, bay leaves and stock, and then the chicken pieces, coating them well with the sauce. Cover the saucepan with a lid and cook on a gentle simmer for 20 minutes.
  5. Add the potatoes and olives, season well and cook for another 35 minutes until the potatoes are tender. Serve immediately.
