First Fish Cakes

KIDS TOP CHOICE RECIPE: Makes 10

Ingredients

  • 300g salmon (whiting also can be used)
  • 4 medium potatoes
  • 2 eggs
  • 1-2 tbsp of vegetable oil
  • 1 sprig of parsley, chopped
  • Flour, to coat
  • 2 slices of brown bread, blitzed for breadcrumbs
  • 1 lemon, cut into wedges, to garnish

Method

  1. Steam or bake fish for approximately 20 minutes until cooked. Flake the fish and remove all bones.

  2. Meanwhile, steam or boil the potatoes for approximately 30 minutes until cooked. Drain, then mash well until there are no lumps.

  3. Mix together the flaked fish, mashed potatoes, 1 of the eggs, the vegetable oil and parsley, then use your hands to shape the mixture into a long sausage-shaped roll.

  4. Wrap the roll in cling film and place in the fridge for one hour to chill.

  5. Remove from the fridge and slice the roll into 8-10 even-sized fish cakes.

  6. Prepare three saucers or small dishes – one each with flour, beaten egg, and breadcrumbs.

  7. Dip each fish cake in to the flour, then the egg and then coat with breadcrumbs.

  8. Grill the fish cakes until golden brown, and serve with some lemon wedges.
