Cheesy Sweet Potato Quesadillas Recipe

It’s Sunday night and everybody is dreading the next morning...

Spice up everyone’s mood and tastebuds by preparing these delicious Mexican quesadillas and getting ready for the new week.

And the best of all? Make it a family affair. Let everyone prepare their own quesadilla. In no time you’ll all be stuffed and ready to take on any challenges Monday may bring.

Prep Time: 10 Minutes
Cook Time: 25 Minutes

Ingredients

  • 2 medium sweet potatoes, peeled and chopped into small chunks
  • 2 red peppers, deseeded and chopped
  • 2 green chillies, deseeded and chopped
  • 2 garlic cloves, crushed
  • 1 tbsp olive oil
  • Salt and black pepper
  • 4 large tortillas
  • 230g Mozzarella, grated
  • 1 x 198g tin of sweetcorn, drained
  • A handful of fresh coriander, chopped
To serve:
  • Sour cream
  • Salsa

Instructions

  1. Preheat the oven to 200˚C/180˚C fan/gas mark 6. Place the sweet potato, peppers, chillies and garlic on a large baking tray. Drizzle with olive oil, season with salt and pepper and toss to coat. Roast in the oven for 18-20 minutes.

  2. Lay the tortillas on a flat surface. Top half of each with a quarter of the vegetables, Mozzarella, sweetcorn and coriander. Fold each tortilla in half over the toppings to form four small quesadillas.

  3. Place on the baking tray and bake in the oven for five minutes until the cheese has melted. Sprinkle with extra coriander and serve with sour cream and salsa. 

Per Serving 1249kcals, 33.1g fat (11.5g saturated), 179.3g carbs, 14.5g sugars, 67.5g protein, 25g fibre, 1.315g sodium.
