Easy Chicken Fried Rice Recipe

In the mood for some tasty Asian food, but also don’t want to leave the house? Then cook your own, with this surprisingly easy recipe. The best thing is, you can improvise with your own ingredients to suit your own tastes: Add other sauces, spices or veggies to spice it up, or keep it simple, this is such a versatile recipe.

Don’t worry about leftovers. It’s amazing for lunch the next day as well as long as you refrigerate properly overnight.

Prep Time: 5 Minutes
Cook Time: 25 Minutes

Ingredients

  • 150g frozen peas
  • 2 tbsp vegetable oil, divided
  • 3 chicken fillets, chopped into bite-sized pieces
  • 3 shallots, chopped
  • 4 carrots, peeled and chopped
  • 2 garlic cloves, crushed
  • 2 large eggs, beaten
  • 450g cooked long grain white rice, refrigerated overnight
  • 3 tbsp soy sauce
  • 1 tbsp sweet chilli sauce
  • 1 tsp sesame oil

Instructions

  1. Place the frozen peas in a small bowl and add enough boiling water to just cover. Allow to thaw for one minute, then pour into a sieve and drain well.
  2. Heat one tablespoon of the vegetable oil in a large pan or wok over a medium-high heat. Add the chicken and stirfry until cooked throughout. Transfer to a plate.
  3. Heat the remaining vegetable oil in the pan, add the shallots, peas, and carrots and cook for 3-4 minutes. Add the garlic and cook for 30 seconds. Turn the heat to low, push the vegetables to one side of the pan and pour the beaten eggs onto the other side. As the eggs cook, scramble them gently with a wooden spoon.
  4. Add the cooked rice, chicken, soy sauce, sweet chilli sauce and sesame oil, and toss well to combine until the ingredients are heated through.
