Chicken-Goujons-and-Chips

Chicken Goujons and Chips

A healthier version of chicken and chips: My kids love this dinner!

I often make it on a Friday, and make enough goujons for 2 days.  Then on the Saturday, they might have them in a wholemeal pitta bread  for lunch.

Instructions

  • Chicken fillets (as good quality as you can)
  • Rooster potatoes
  • A beaten egg
  • Flour
  • Breadcrumbs (panko breadcrumbs work well)
  • Sesame seeds (optional)
  • Olive oil
  • Salt and Pepper

Instructions

  1. Peel your potatoes, slice into chips and toss in a large bowl with olive oil.  Lay on a baking tray and put in a pre-heated oven at 200C for approx 30 mins.  Give them a shake after 15 minutes to prevent them from sticking and turn them over.

  2. Combine the breadcrumbs and sesame seeds if using.  Cut your chicken into strips, dip each one first in flour, then in egg and then in the breadcrumb and sesame seed mixture.

  3. Fry gently on the pan with olive oil.

  4. Serve your chicken and chips with steamed carrots and peas
