Baked Tomato Chicken

If you’re looking for a new way to serve your Sunday chicken, baking thighs (skin on) is a great alternative to a full roast. The chopped tomatoes and bell peppers add plenty of fresh flavours, and it tastes great served with boiled baby potatoes. Or with a little rice/bread to soak up the juices!

Serves: 4
Prep Time: 15 minutes
Cook Time: 30 minutes

Ingredients

  • 40ml olive oil
  • 1 onion, chopped
  • 1 yellow and . green pepper, deseeded and chopped
  • 1-2 tbsp dried chilli flakes, to taste
  • 2 garlic cloves, chopped
  • 1 x 400g tin of chopped tomatoes
  • 350ml chicken stock
  • 8 large chicken thighs, skin on
  • 500g baby potatoes

Instructions

1. Heat half of the olive oil in a small pot over a medium heat and add the onion, peppers and chilli flakes. Cook for two minutes, then add the garlic and cook for 2-3 minutes until the onion is soft but not coloured.

2. Add the tin of tomatoes and the chicken stock and turn the heat up to medium-high. Bring to a simmer and cook for 10 minutes.

3. Meanwhile, preheat the oven to 180˚C/160˚C fan/gas mark 4. Heat the remaining oil in a large pan over a medium-high heat and cook the chicken thighs for 4-5 minutes or until browned on all sides.

4. Put the chicken into a baking dish and cover with the tomato sauce.

5. Place the dish in the oven and cook for 25-30 minutes, until the chicken is cooked through. Meanwhile, cook the potatoes in a large pot of salted boiling water until tender.

6. Drain and serve the potatoes with the chicken and the tomato sauce. Finish with a drizzle of olive oil.
