Tray-Baked Fish And Potatoes

This twist on a fish pie brings delicious Mediterranean flavours to simple white fish and potatoes. It can all be made in a single roasting dish with no need for extra pots and pans, so perfect for those nights when all you can manage is a bit of chopping!

Serves: 4
Prep Time: 10 minutes
Cook Time: 20 minutes

Ingredients

  • 2 large potatoes, rinsed and very thinly sliced
  • ½ tsp ground turmeric
  • ½ tsp dried coriander
  • 2 tbsp olive oil
  • Salt and black pepper
  • 2 large garlic cloves, sliced
  • 1 large leek, washed and thinly sliced
  • 250g cherry tomatoes
  • 125ml dry white wine
  • 4 x 180g pieces of white fish such as hake, cod or pollock, pin-boned and skinned
  • 20g butter

Instructions

1. Place a large roasting dish in the oven and preheat to 240°C/220°C fan/gas mark 9. Place the potatoes in a bowl and add the turmeric, coriander and oil. Season well, toss to coat and set aside.

2. Remove the roasting dish from the oven. Place half the potatoes in the dish and top with the garlic, leek and tomatoes. Pour over the wine. Place the fish fillets on top and season. Finish by adding the rest of the potatoes, overlapping slightly, to form a lid. Dot small knobs of butter over the potatoes.

3. Reduce the oven to 210°C/190°C fan/gas mark 6. Bake for 20 minutes or until the fish is opaque and the potatoes are lightly golden, then serve.

Per Serving: 433kcals, 13.3g fat (4.1g saturated), 36.1g carbs, 4.9g sugars, 38.8g protein, 5.7g fibre, 0.249g sodium
