Salmon With Thai Red Curry Sauce

This easy salmon dish brings together delicious Thai flavours of red curry, lime, and coconut milk, to create a ‘fakeaway’ for a portion of the cost of a takeaway. Pak Choi is the perfect accompaniment (and can be found in most supermarkets now), but spinach or broccoli could also work as an alternative.

Cook Time: 10 minutes


  • 8 whole baby pak choi
  • 3 tbsp vegetable oil, divided
  • ½ tsp Thai red curry paste
  • 1 x 400g tin of coconut milk
  • 1 tbsp brown sugar
  • Zest and juice of 1 lime
  • 2 tbsp fish sauce
  • 4 x 170g salmon fillets


1. Blanch the pak choi in a pot of salted boiling water for about two minutes, then drain.

2. Heat one tablespoon of the vegetable oil in a large pan or wok over a medium heat. Add the curry paste and stir for 30 seconds. Add the coconut milk and brown sugar. Boil for five minutes until the mixture is slightly reduced.

3. Stir in the lime zest and juice and half of the fish sauce. Set the curry sauce aside.

4. Preheat the oven to 200°C/180˚C fan/gas mark 6. Heat one tablespoon of the oil in a large oven-proof pan over a high heat. Season the salmon with salt and pepper, then add to the pan. Cook for two minutes on each side.

5. Transfer the pan to the oven and bake the salmon for 6-7 minutes or until cooked.

6. Meanwhile, heat the remaining oil in large nonstick pan over a medium-high heat. Add the pak choi and cook for 3-4 minutes. Drizzle with the remaining fish sauce./

7. Bring the curry sauce to a simmer over a medium heat. Serve each salmon fillet on a bed of pak choi and topped with a ladleful of the red curry sauce.

Per Serving: 591kcals, 45.1g fat (24.7g saturated), 12.6g carbs, 9.7g sugars, 38.7g protein, 4.2g fibre, 0.948g sodium.
