Millionaire-Flapjacks

Millionaire Flapjacks

Want to whip up something a little different? These Millionaire Flapjacks (a twist on Millionaire Shortbread, but with the oats adding extra texture and flavour) are delicious and oh so fun to make!

You can now get tins of caramel from brands like Carnation, otherwise you can simmer condensed milk with a little brown sugar and butter until it starts to change colour.

Makes 16

Ingredients

  • 200g soft brown sugar
  • 200g butter, plus extra for greasing
  • 2 tbsp golden syrup
  • 350g oats
  • 1 x 397g tin of caramel
  • 200g dark chocolate
  • 1 tbsp vegetable oil

Top tip: The caramel for this should be thick. If it looks too thin, pop it into a saucepan and boil for a few minutes, stirring until thickened

Instructions

  1. Heat oven to 150˚C/130˚C fan/gas mark 2 and line a 25cm x 17cm square tin with parchment paper.
  2. Combine the brown sugar, butter and golden syrup in a large saucepan over a medium heat, stirring until melted.
  3. Remove from the heat and stir in the oats until combined.
  4. Pour the mixture into the tin, smoothing into an even layer. Bake for 35 minutes and leave to cool completely.
  5. When cooled, spread over the caramel. Refrigerate until firm.
  6. Melt the chocolate in a glass bowl set over a saucepan of simmering water. When smooth, stir in the oil (this helps with slicing later). Pour and spread the chocolate over the caramel layer.
  7. Leave to set, then slice into bars to serve.
