Easy Jam Tartlets

With only 2 ingredients, and the fun of cutting out the pastry and feeling each case, these easy jam tarts are great fun to make with the kids.

Try puff pastry if you want a lighter (but slightly messier) tart case, and use your favourite flavour of jam, or a variety if you want the fun of different colours - Strawberry, Blackcurrant, Apricot, and Lemon Curd would make a great selection!

Makes 24

Ingredients

  • 2 x 320g sheets of shortcrust pastry, thawed
  • 100g jam

Instructions

  1. Preheat the oven to 200˚C/180˚C fan/gas mark 6.

  2. Roll out the pastry on a lightly floured surface using a rolling pin.

  3. Stamp out 24 small circles using a pastry cutter.

  4. Use them to line two mini muffin tins or mince pie tins.

  5. Prick the bottoms with a fork.

  6. Spoon one teaspoon of jam or marmalade into each.

  7. Bake for 12-15 minutes until the pastry is golden, then leave to cool on a wire rack.

Per serving: 131kcals, 7.7g fat (0g saturated), 14.5g carbs, 2.5g sugars, 1.3g protein, 0g fibre, 0.002g sodium.
