Easy Banana Bread Recipe
There's nothing like banana bread for using up those bananas that are starting to go a little too brown! If you don't have any apple sauce just add in an extra banana or two. Plus we love a bit of spice, but you can leave out the cinnamon and nutmeg if you prefer.
Delicious by itself, or grilled and topped with a little butter and banana slices.
- 2 large eggs
- 8 tbsp apple sauce
- 2 large, overripe bananas
- 60ml milk
- 1 tsp vanilla extract
- 125g plain flour
- 120g wholewheat flour
- 1 tsp bicarbonate of soda
- 1 tsp baking powder
- 1 tsp salt
- ½ tsp cinnamon
- ½ tsp nutmeg
Preheat the oven to 180˚C/160˚C fan/gas mark 4 and line a loaf tin with parchment paper.
In a large bowl, beat the eggs until fluffy. Add the apple sauce and mashed bananas and stir to combine. Add the milk and vanilla and mix well.
In separate bowl, combine the flours, bicarbonate of soda, baking powder, salt, cinnamon and nutmeg.
Add the wet ingredients to the dry. Pour into the prepared loaf tin and bake for 45 minutes.
