Chicken Pesto Panini Recipe

A lovely, tasty and filling lunch idea for you, the kids, or for the whole family!

Serves: 4
Prep Time: 3 minutes
Cook Time: 4-5 minutes

Ingredients:

  • 4 crusty baguettes
  • Olive oil
  • 4 tbsp fresh basil pesto
  • 4 handfuls of baby spinach leaves
  • 16 sun-dried tomatoes in oil, drained and chopped
  • 350g roast chicken, sliced
  • 100g Gruyère, grated
  • Salt and black pepper

Instructions:

  1.  Preheat a sandwich maker or countertop grill.
  2.  Slice the baguettes in half and pull out some of the bread from each half to create a slight depression. Brush the outsides of the bread lightly with oil.
  3.  Spread the insides of the baguettes with pesto. Top with spinach, sun-dried tomatoes, chicken and grated cheese. Season with salt and black pepper, then press the baguettes closed.
  4.  Place on the sandwich maker or countertop grill and cook for 4-5 minutes or until golden and the cheese has melted. Slice across the middle diagonally and serve with the soup.
